Turtle is most commonly considered for use as a very high end soup by most cooks. The texture is sometimes compared to frogs legs or even lobster by some. We find the flavour delicate like veal in its simplest form but depending on preparation method and saucing other applications may enhance further.

The turtle meat is farm raised in Iowa, USA. It is a freshwater snapping turtle that is processed semi boneless and packed in a five pound pail then deep frozen. It is recommended to use all the contents at once after thawing and do not refreeze. You may however freeze the finished product after cooking if you so choose.
