Guinea Hen

Guinea fowl originate from Africa. It is possibly man’s earliest delicacy, since fossilized guinea tracks have been found alongside the archaeological evidence of our antecedents in the Olduvai Gorge in Africa.

The flesh of young guineas is tender and has a fine flavour. Dressed guineas are attractive in appearance and although the pigment of the skin is dark, the breast meat is white. Guinea meat has 1/2 the fat of chicken, 1/3 fewer calories and 25% more protein.
