Quail

Since quail is most often sold by the half dozen, the size of the bird in the bag can make a major difference in the meat delivered category. We have searched the country and found the plumpest quail in Ontario. While most regular quail weigh in at 4 oz., our 5 oz. bird is anything but paltry poultry.

With a plumper breast and more intense flavour than the partridge family from which it takes wing, quail dishes are most often found on European and Asian menus where it is prized properly. Great for salads, roasting stuffed or grilled, quail offers an easy-to-cook protein for aficionados and first-timers alike.

Prep Tips

One of the more forgiving wild birds, quail is a tougher bird to dry out than pheasant and has a natural tendency to remain moist and tender.
