Squab is one fowl which is featured widely in many ethnic cuisines where it is sought after for its tenderness. Squab is essentially a young domesticated pigeon that has never flown. Pigeons fly the coop. Squab stay for dinner. Farmed across BC, the crossbred offering of the White King and Hubble varieties yield a broad-breasted bird with a good offering of meat.
